hot wing recipenow i usually dont do this, but i need all the help i can get. and therefore, im sharing my secret hot wing sauce with you.
for about 5lbs wings.
Ingriedients
4cups franks red hot sauce. only franks red hot will do
3 large tblspns butter (not margarine or country crock)
Celery salt
worsectshire (only lea and perrins)
tabsco (only tabasco, not petes or any other pussy sauce)
california style garlic powder
minced garlic
1 jalepeno or habenero (depending on how spicy you like it)
white vinegar (not apple cider vinegar)
cayenne pepper
optional:
corn starch
salsa (any)
Begin:
mince your jalepno/habenro; sautee about 3 tbs of minced garlic in butter until garlic turns very light brown.
add celery seed. i like a lot of this, but normally 2 tsps will do. ADD dry seasoninings. i usually use 2 tblspnsof celery salt. add abour 4-7 good shakes of california style garlic powder. recipe calls for 2 tsps of cayenne, but i like my wings hot, so i go for 2 tbls of cayenne. add a lil dash of crushed black pepper just to fuck you up.
at this point you should have all your dry seasonings marinating in butter and minced garlic. once, the sauce become oily you want to add your wet ingriedients. so dash awat with tabasco at first, (marinated tabasco is the shit) and let it sit. again, i like my wings hot, so i usually use 2 tblpsns.
add about 3-4 shakes of worcestshire, you dont need much at all. its just there to make you question wtf is that?
add the franks red hot. stir repeatedly. when the franks is hot (no pun intended) add the vinegar. this is where you can fuck up. the vinegar is the most difficult and most important ingriedient. i reccommend starting with 2 tsps, tasting, adding another tspn, tasing, etc. until you find that tart holy shit taste. if you think you over did it, just add more franks.
once you have theat done you should be gtg. at this point its a matter of taste and consistency. like your wings sloppy? this recipe should make them very wet. if not, make sure your sauce is almost boiling and add very gently a half a tsp of corn starch at a time giving it a minute to soak in. dont fuck with corn starch.
at this point, add more ingriedients as you see fit. you may find old bay seasoning in a seperate bowl will complement nicely, or even adding more of the orginal ingriedients.
